آیا زعفران خراب میشه ؟
برای این که بتوانید از عطرطعم و خواص خارق العاده زعفران نهایت استفاده را ببرید بهتر است آن را مانند بسیاری از ادویه های دیگر در سریع ترین زمان مصرف کنید زیرا این ادویه با گذشت زمان به تدریج قدرت خود را از دست داده بعد از گذشت 2 یا 3 سال عطر و طعم اولیه خود را نخواهد داشت.
زعفران به دو فرم رشته ای و پودر عرضه می شود و معمولا روی بسته بندی هر دو بهترین زمان استفاده درج شده است خوشبختانه در صورت نگهداری صحیح از این ادویه می توانید تا ماه ها و حتی سال ها بعد از گذشت این تاریخ نیز از آن استفاده کنید اگر هیچ تاریخی روی بسته بندی درج نشده این طور در نظر بگیرید که احتمالا ادویه چند سال بعد بیشترین عطر و طعم خود را خواهد داشت .

ماندگاری زعفران چقدر است؟
در زعفران ترکیبی به نام سافرانال وجود دارد عطر زعفران به دلیل وجود سافرانال است.
یک ماده دیگری که غیر فعال هست به نام پروستین این که در حقیقت رنگ زعفران را باعث میشود ده درصد وزن خشک زعفران همین آلفا کروسین هست که اون رنگ و عطر زعفران رو خواهد داشت.
اول زعفران را خشک و آسیاب بکنید کار آسانی است شما با هر وسیله ای که در خانه دارید می توانید این کار را انجام دهید البته اگر با یک وسیله چوبی این کار را انجام بدهید بهتر است.
اگر زعفران خشک نباشد باید قبل از آسیاب کردن آنرا با فر یا شعله خشک کنید که البته بهتر است این کار را با فر انجام دهید و برای خشک کردن زعفران با این شیوه ها شما به ۵ تا ۸ دقیقه زمان نیاز دارید. ولی نباید مدت زیادی به آن گرما بدهید چراکه موجب سوختگی زعفران و هدر شدن خواص آن می شود تاریخ انقضا زعفران بستگی به شیوه نگهداری ما از این ادویه دارد با اینکه زعفران ماندگاری بالایی دارد ولی به مرور زمان طعم و عطرش را از دست می دهد.
زعفران تاریخ مصرف گذشته دارای عطر تند تری نسبت به زعفران تازه است و رنگ تیره تری دارد.

نگهداری زعفران در یخچال:
اگر تمایل دارید که زعفران خود را در فضای یخچال نگهداری کنید به نکات زیر عمل کنید:
در مرحله اول شما باید زعفران را دم کنید و به صورت دم شده، زعفران را فریز کنید.
بهتر است برای فریز کردن زعفران آنرا در بسته های کوچک یخی نگهداری کنید که به راحتی بتوانید استفاده کنید.
سعی کنید که زعفران را در بسته هایی که شیشه ای هستند قرار دهید.

روش نگهداری از زعفران خشک شده:
((سوال خیلی ها این است که آیا زعفران خراب میشه ولی مهم تر از آن روش نگهداری و جلوگیری از این اتفاق است!))
خیلی ها در همان اول کار و قبل از خشک شدن زعفران را خشک نشده بسته بندی می کنند و فرآیند فریز کردن یا نگهداری در یخچال را استارت می زنند که این کاری بسیار نادرست است.
ولی اصول کار بدین نحو است که اگر زعفران خشک نشده باشد باید آنرا خشک کنید و آنرا بسابید و بعد دم کرده و فریز کنید.

شرایط مناسب برای نگهداری زعفران:
زعفران را باید در یک محیطی که خشک و تاریک است و از آب و هوایی خنک و مرطوب نگه داری کنید و هرگز آنرا در مقابل تابش مستقیم نور خورشید قرار ندهید. چراکه موجب کاهش رنگ زعفران می شود و باعث می شود کیفیت زعفران پایین بیاید و در هنگام استفاده از آن عطر و بوی همیشگی و بی نظیر خود را از دست بدهد.
دمای مطلوبی که برای نگهداری زعفران گفته شده است حدود ۲۰ درجه سانتی گراد می باشد و رطوبت هوا هم باید کمتر از تقریبا %۴۰ باشد.
نگهداری زعفران در هوایی که آزاد است از جهت وجود آلودگی های آب و هوایی برای زعفران مضر است موجب کاهش عطر و بوی دلنشین زعفران هم می شود.
اگر می خواهید علاوه بر حفظ کردن عطر و طعم زعفران خود کیفیت عطر و طعم آنرا هم افزایش دهید پس هنگام مصرف زعفران آنرا کاملا پودر نمایید.
تفاوت زعفران تازه از زعفران مصرف گذشته فقط در ماه های ابتدایی پس از برداشت زعفران قابل مشاهده است هر چه از فصل برداشت زعفران فاصله می گیریم تشخیص زعفران تازه از زعفران کهنه دشوار تر می شود.

زعفران باعث مسمومیت میشود:
اما ترکیب سمی که گفته شد داخل زعفران وجود دارد با مصرف زیاد میتونه خیلی خطرناک و حتی کشنده و مرگ آور باشد.
ترکیب دیگری به نام پیکروکروسین هست که طعم تلخی را به زعفران میدهد.
زعفران به مقدار زیاد به صورت تنها استفاده کنیم متوجه میشه که طعم تلخی را دارد.

در صورتی که مادر باردار از زعفران به عنوان چاشنی غذایی خود استفاده کند.
دچار مسمومیت شده که این مسمومیت به رحم او آسیب میزند و موجب سقط جنین می شود.
پزشکان توصیه می کنند در صورتی که به سلامت خود اهمیت می دهید فقط در روز ۱۰ میلی گرم زعفران استفاده کنید البته باید به صورت مدام استفاده شود تا تاثیر مثبت آن را ببینید.
